My family’s favorite Christmas cookies: Chunky White Chocolate S’mores

It’s the day after Christmas, and I am truly exhausted from the shopping, wrapping, cleaning, cookie baking, eating and entertaining extravanganza that’s been going on for the last two weeks. As much as the holidays are fun, they are exhausting.

By the time my husband and I put the last Christmas present under the tree, which was approximately 10:30 pm on Christmas Eve, our boys woke us up at 1:38 am – they discovered that Santa had paid us a visit. We tried to get them to go back to bed, but their anticipation and elation for what was under the tree was too much. At 2:30 am, armed with a cup of steaming hot coffee and a video camera, we merrily watched as they tore open their presents with utter excitement.

When Christmas dinner was served, I was ready to relax with family and friends – and a glass of wine. With our main course of Honey Baked Ham, Scalloped Potatoes, Maple Balsamic Greens and Waldorf Salad, I popped the corks on several different bottles of wine:  Cornerstone Oregon 2010 Stepping Stone Pinot Noir, Domaine Meriwether 2000 Prestige Cuvée Brut Rosé Oregon Sparkling Wine, King Estate Blackjack Block 2009 Pinot Noir and Oak Knoll’s Toasted Cow Willamette Valley White Vintners Blend. Although each of these wines had very different flavor profiles, they all paired excellently well with the dinner.

Domaine Meriwether Sparkling WineNow we have just a few days until New Year’s Eve, and the only kind of wine I’ll be popping the corks on come December 31 is the kind with millions of bubbles. I’ve got three Oregon sparkling wines we’ll be enjoying as we watch the ball drop in New York City: King Estate 2008 Blanc de Noirs, Domaine Meriwether Celebration Cuvée and Capitello NV Brut sparkling Wine.

When 2013 arrives, the festivities will be over and the exhaustion will turn into the much needed energy – energy used to exercise off the holidays!
